Grilled fish (Pa Pinh Top)

It is an easy to make local dish and has unforgettable taste because of the ingenious and reasonable mix of spices.

To make grilled fish, people use the kinds of fish such as: carp, silver carp, about 1-1.5 kg per one. The fish are operated behind the back, remove intestine, and let dried then rub roasted salt inside. The spices mix to marinate include: mac khen (also called wild pepper), roasted and crushed fresh chilies, fresh onions, chopped herbs and corianders. All of them are mixed and stuffed into fish's belly, let fish absorb the spices, then fold the fish and use bamboo splints to bake above the hot coals until yellow-ripened. When they are removed, they have to be not broken; smell strong of spices. When we enjoy, we can feel the sweetness of fish, the spice of chilies and "mac khen", the green of onions and coriandersand the yellow of fish's skin.
